Roasted pork belly with cauliflower mash

Preparation Time: 1 Hour Cooking Time: 3 Hour
Ingredients :
- 2.5kg pork belly - deboned & scored
- 1 Tbsp sea salt flakes
- 2 red onions - chunky
- 2 apples - chunky
- 1 cup white wine or cider
Method :
- Pre-heat oven to 220°C.
- Rub salt onto the skin of the belly and into the scoring marks.
- Place the pork belly in a baking dish in the oven for 30 minutes.
- After 30 minutes remove the pork, add the onions and apples.
- Turn the temperature down to 150°C & cooker another 3 hours, or until the meat is tender.
- For more crispy skin, turn on the grill for the last 3-5 minutes.
- Remove pork from oven and let it rest.
- Remove onions and apples, mash roughly and serve with pork as an accompanying relish.
Cauliflower Mash :
- 2 head cauliflower - roughly chopped
- 2 Tbsp mascarpone cheese
- 1 Tsp olive oil
- Salt & pepper to taste
- Boil cauliflower in salted water for 10-15 minutes until tender.
- Remove, drain, add mascarpone cheese and olive oil.
- Blend until smooth, add salt and pepper to taste.
